Gluten Free Waffles

As I mentioned in my Bob’s Red Mill Pizza post, I miss “REAL” bread dearly.

One of my favorite things, pre-Celiac days, was a toasted peanut butter, honey and banana sandwich.  Well, gf living is all about substitutions and these Nature’s Path WildBerry waffles have replaced my bread.

No complaints from me because these waffles(found at Whole Foods) are gooood.  I used to buy Van’s gf waffles but these are MUCH better….not as crumbly or airy.  I’m all about the “real factor” and these taste “real”.   Note: I’ve tried the plain Nature’s Path waffles and I didn’t care for them 😦

Toast ’em, spread ’em with PB, Trader Joe’s Creamed Honey(ooooh…delightful stuff) and sliced nanas.

The photo: I promise there is PB and honey under those nanas.

TIP of the day: to avoid cross contamination in the toaster oven…and to avoid purchasing another toaster oven….I place a small piece of aluminum foil in the oven, place my waffles, bagels, etc.  on top of the foil and toast away.

  1. OMG…..that looks amazing! I have yet to try those waffles, but will look for them now. I use Van’s blueberry now, they are less crumbly than the plain. I have seen the Nature’s Path Mesa Sunrise Waffles, but not these.

    Also have to get some of that creamed honey…never heard of that!

  2. I’ll keep my eyes open for the Sunrise Waffles…I haven’t seen those at Whole Foods. Too bad they need to be frozen or we could do a waffle swap 🙂

  4. Ooh I’ve tried those. I also think Van’s are too dry.

    Cookies- I have had problems with spreading too!

    Some things that work- using shortening instead of butter. I usually use Crisco. Butter has water, which causes the cookies to spread more. At least, that’s how I think it works.

    Using less butter helps too, but decreasing it too much will change the taste and texture of the cookies.

    Also, they will spread less if you refrigerate the dough. It sucks because you have to WAIT for cookies, but it helps.

    Decreasing the liquid or increasing the flour by -just a little- seems to help as well.

  5. I will need to look for those waffles! Yummy. I hear what you’re saying about missing the ‘real’ taste of food. Nothing like a loaf of bread that can double as a door stop. Bleh!

  6. ooh – I’ll have to try these — I have had Van’s a few times, but didn’t love them.

    I hear you on the bread thing – I am ALWAYS looking for good bread. You may have seen on my blog before, but my faves are Sterk’s and Schar. Schar’s only problem is it’s so small! Sterk’s is amazing, but it’s pricey and hard to find.

    I have found that Kinni-Kwik’s quick bread mix is also great – and doesn’t need to be toasted! Although, after a few days it gets pretty crumbly. But it’s EASY. No yeast, just mix 3 ingredients & pop it in the oven…

  7. Okay, I found the waffles here in NC on vacation! I just had some for breakfast and I love them!! Topped with Barney Butter & Strawberry Fruit Spread. I hope I can find them back in Ohio. They are a little smaller than Van’s, but I like the texture/consistency better.

    And, a note on Van’s….I have found that the Blueberry waffles are much better than the plain…texture especially. The blueberry flavor isn’t overpowering either, so you can top with anything.

      yes, i think the consistancy is MUCH better.

      funny though, like the Van’s blueberry vs. the Van’s plain, i also think the nature’s path wildberry are much better than the nature’s path plain.

      you wouldn’t think a little fruit would change the flavor…but heck, whatever works.
