A Celiac and her supplements

It seems a bit weird talking about vitamins, especially when my preference is to post about food, but I thought this might be interesting to some. 

I, like many others who are diagnosed with Celiac, suffer nutrient loss.  For me, I have to keep a close watch on my iron, B-12 and calcium levels…. which, by the way, were “normal” at my yearly physical in March. YAY!  Affirmation that a gf diet does work, small intestines do heal and vitamins definitely help.

This is what I take every day with breakfast:

1 Women’s multivitamin which supports heart health,  bone strength and breast health…..along with giving me an iron and B-12 boost!

 1 OS-CAL calcium supplement which contains Vitamin D.  Osteoporosis runs in my family so I’m doing my best to avoid that diagnosis. Celiac is enough 🙂  I take another one at dinnertime.

2 Glucosamine softgels that contain MSM and that help the renewal of cartilage in my aging knees. Oh, how they hurt sometimes…especially when I engage in high-impact exercises. Yes shred, I’m talking about you. I take another one at dinnertime.

1 Culterelle which was introduced to me by a co-worker. It is a natural dietary supplement that improves digestive health by restoring the natural balance of good bacteria in my digestive tract. Cool.

Gluten Free Chex

Look! Look! Look what my dad sent…..

a package with  3 boxes, yes 3 boxes, of Gluten Free Honey Nut Chex! Awesome!

While I am a frequent buyer of Rice Chex, I have yet to see the Honey Nut guys on the Houston grocery shelves.  Fortunately in NC, where my parents live,  they sell this flavor. My dad came to the cereal rescue and stocked my pantry.

Funny how gf food can make a girl so happy 🙂

Thanks dad! You’re the bestest!

By the way, the cereal is pretty darn addicting….a little too sweet for breakfast but perfect for a pick-me-up snack!  I’m hoping the Corn Chex will follow soon?!?!

Tuesdays with Dorie: Four Star Chocolate Bread Pudding-Gluten Free

Ta Da….gluten free chocolate bread pudding!

Lauren of Upper East Side Chronicle chose this week’s TWD.  Check out her blog to find the recipe.

After a long TWD hiatus I decided it was time to make an appearance 🙂

This recipe was an interesting experiment; having to substitute gluten free bread for the suggested day-old croissants or challah.  There just isn’t a comparison in my book but I proceeded.  I chose to use Glutino bagels as my “bread”.  I cut the bagels into 1 inch cubes and dried the cubes in the oven for about 10min.(to mimic stale bread).  I then added my bagel bites to the ramekins along with dried cherries and my egg/milk/sugar/chocolate mixture.

Results and thoughts:

I sampled this the same day it was made and the custard hadn’t set completely….but the flavor was RIGHT ON! Alex, my son, said it tasted like chocolate ice cream.  I think he described the taste perfectly.

I sampled the bread pudding the next day and the bagel pieces were ROCK HARD…..but the chocolate custard was perfect!  Darn it!

Soooo….I enjoyed the flavor of the bread pudding if only my bread and custard textures would have been on the same page.   I enjoyed the experiment but I’m much more of a muffin, cake, or cookie kind of girl.

30 Day Shred Challenge Update

The countdown has begun.  4 days left of my shredding challenge.  AM workouts are the way to go…hands down!  I’m much more consistant when I complete the shred 1st thing in the morning.  I love how it jump starts my day!  Keep it up and finish strong!

Dessert Nachos

Back in March I was the lucky recepient of free Oikos Greek Yogurt coupons, given by Kristina at Stonyfield Farm.  Thanks Kristina!

I have to say that I am an official greek yogurt convert.  I won’t say NEVER, but I really can’t imagine buying regular yogurt anymore.  The fact that it is gluten free is an obvious reason but also because it is high in protein, has no cholesterol and is all natural.  Give it a try and I think you’ll agree!

I chose to use my free samples on dessert nachos.

Once again, a mexican theme is posted 🙂  For all of you who don’t know…I am married to a Mexican and his food influences have rubbed off on me.  A good thing .  I must tell you, however, when I told him I was making strawberry nachos he said “what?, those aren’t nachos….nachos need jalapenos”. Ha,Ha.  I guess you can call these American nachos.

 These nachos are homemade cinnamon sugar corn tortillas, topped with sliced strawberries, vanilla Oikos Greek Yogurt and a sprinkle of cinnamon.  Nachos that actually have some protein and vitamin C.  Nachos that won’t leave a grease pit in your stomach. A wonderful addition to a spring dinner menu OR, like our house, a nice afternoon snack 🙂

To make the tortillas:

Cut gf corn tortillas(I used the Wal-Mart brand) into triangles and spread, in a single layer on a baking sheet.  Lightly spray with Pam and sprinkle with cinnamon sugar mixture(roughly 1/8 cup sugar and 1 teaspoon cinnamon).  Bake @ 425 degrees for 10-15 minutes.

I think the rest of the nacho preparation is self-explanatory,right?  I know you bloggers are creative so I’d be interested in seeing your take on dessert nachos…..what toppings would you enjoy?  Let me know.

30 Day Shred Challenge Update

I have completed  24 days of the challenge. Six more Level 3 workouts and I’m DONE!  Level 3 is no joke. All of those plank push-ups are killer. By the end of the workout, I am one sweaty, breathing hard girl 🙂  It feels good knowing that my body has been pushed. Even when this challenge is over I will continue to incorporate this DVD into my exercise.  I love it ! For all of you other shredders, keep up the good work and stick to the workouts…you’ll be thankful!

Mexican Chicken Chili and Tortilla Chips

I hope all of you are having a nice holiday weekend!

For us, Easter brought RAIN, RAIN, and RAIN!  Not a perfect day for an Easter egg hunt but definitely a perfect day for homemade chili and tortilla chips. 

This recipe is a family favorite and I’d like to share it with my readers 🙂  It gets the GF, thumbs up approval! Not only is it gluten free, it also can be made vegetarian by eliminating the chicken and adding  a can of black beans and/or a can of corn. Versatile, simple, easy and flavorful!! 

Mexican Chili

  • 1 pound of chicken breast boiled and shredded
  • 1 small onion, diced
  • 1 medium green pepper(I used 1/2 red and 1/2 yellow)
  • 2 teaspoons minced garlic
  • 2 cans diced tomatoes
  • 1 cup picante sauce(I used Pace Medium Spiced)
  • 1 can pinto beans(15 oz.)
  • 1 1/2 teaspoon ground cumin
  • 1 1/2 teaspoon chili powder

-In a large stock(soup) pan saute onions, peppers and garlic in ~2 Tablespoons olive oil until soft and transparent

-Add rest of ingredients

-Bring to a boil and reduce heat to low; simmer for ~20 minutes

-Serve with tortilla chips, grated cheese and/or sour cream

Homemade Tortilla Chips

  • 8-10 GF corn tortillas( I used Great Value–the Wal Mart brand)
  • salt
  • cooking spray(I used Pam)

-Cut  tortillas into triangles

-Place triangles, in a single layer, on baking sheet ;spray lightly with cooking spray and sprinkle with salt

-Bake for @ 425 degrees for ~10-15minutes(or until lightly brown and crispy)

30 Day Shred Challenge Update

I’ve completed 20 days of the shred.  Tomorrow begins level 3. Uh oh….I’m a bit nervous 🙂 I’m so happy with the results so far. I finally bought the hand weights (2 pounds) that were recommended and it makes all of the difference. My upper body strength has improved tremendously and I actually see some definition in my arms.  Success!  If only I had taken “before” pictures.  Oh well, just completing the 30 day challenge is enough for me.

Green Smoothie

If you’re a blog addict browser like me, you may have come across various posts about bloggers trying THE GREEN MONSTER.  The, some might call it crazy, concoction of a green, leafy vegetable(spinach or kale) and fruit.  Correct me if I’m wrong but I believe the creator of this blender beverage is Angela at Oh She Glows?

My curiosity got the best of me today and I had to get a taste of the spinach action 🙂  I rummaged through my fridge and found some fitting ingredients.

  • 3/4 cup yogurt
  • 1 banana
  • 1 large handful of spinach(I actually want to use 2 handfuls next time)
  • a couple splashes of skim milk

Blend and drink!

Yes, it does seem weird adding a vegetable with yogurt and fruit but I’m not kidding when I say that you don’t even taste the spinach(not that it would matter because I like spinach).  The kids thought it was so cool to have a green drink for breakfast AND  I felt good knowing that it is was GF & packed full of nutrients. Just like the Kix slogan, “Kid tested, mother approved”. We drank it up!

Live on the wild side and give it a try!

30 Day Shred Challenge Update

GOOD NEWS!! I’ve reached the half- way point by completing Day 15!!  Yes, you probably have noticed that I haven’t done the shred consistantly for 15 days straight. I could list my excuses but nobody wants to hear them, right?  Just know that  I’m determined to do it for 30 days…even if it isn’t 30 days in a row.  Level 2 has lots of push up style moves which kick my boooooty and make me sweat, sweat, sweat.  By the end of the 20 minutes, my heart is PUMPING and it feels great! I especially love working out in the mornings 🙂
